Mom’s Favorites – Coconut Custard Pie

My mom loved making this pie, as it was simple and delicious.  She got a kick out of putting all the ingredients in the blender!

2 cups milk
1 cup sugar
1/2 cup Bisquick
1/2 stick softened butter
1 tsp. vanilla
3 eggs
1 cup coconut.

In a blender, put in order as listed above. Blend for 2 minutes, pour mixture into buttered 9 inch pie pan. Bake 40 minutes at 375 degrees. The pie makes its own crust!
