Mom’s Favorites – Montgomery Pie

This pie is absolutely delicious!  It combines a ‘wet bottom’ pie with a fluffy cake, yum!  We always requested this pie growing up and we made it in my Mom’s honor on the day she passed away.  We all had wonderful memories of her and this delicious treat.

1 cup dark KaroMomMP
1 cup brown sugar
1 Tbsp. flour
1 egg
1 tsp. vanilla
1 pint (2 cups) cold water

Mix and set aside.

2 cups sugar
3 eggs
1 cup Crisco shortening
2 tsp. baking powder
1 cup milk
3 cups flour

Beat sugar, eggs, Crisco, alternate flour with baking powder and milk.

Pour syrup mixture into unbaked pie shell, then drop dough mixture over the top with a spoon, it will float on top, but as it bakes, it will cover the pike like a cake. Bake 425 degrees for 15 minutes, then turn oven back to 350 degrees for 30 minutes. Make 3, nine inch pies.
